Pheasant is a lean, healthy game bird highly valued in cuisine for its subtle, rich flavor that falls between chicken and venison. Its lack of fat means it can dry out quickly, so successful culinary preparation focuses on cooking methods that retain moisture.

Pheasant meat is primarily white and has a mild, delicate, slightly earthy flavor with a subtle gamey undertone. Farm-raised pheasants tend to have a milder taste, very similar to chicken, while wild pheasants have a richer, more pronounced “wild” flavor due to their varied diet.
