The journey of Acquerello rice begins in the rich, nutrient-dense soil of the Po River Valley, where the perfect climate and conditions for rice cultivation exist. Acquerello rice is unique because it is aged for at least one year after harvest, though some varieties are aged for up to seven years. Aging the rice allows the starches in the grains to stabilize, giving it a firmer texture when cooked and enhancing its ability to absorb flavors. This aging process is essential in making the rice more flavorful and easier to digest.

Unlike most other white rice, Acquerello uses a special process to reintroduce the nutrient-rich germ layer back into the rice after it’s polished. This method ensures that Acquerello retains more nutrients than typical white rice, without sacrificing its delicate texture. The patented process, developed by the Rondolino family, preserves the rice's nutritional benefits while giving it the creamy consistency essential for making risotto

Acquerello rice is made from the Carnaroli variety, often referred to as the "king of risotto rice." Carnaroli is prized for its high starch content, which is essential for creating the creamy texture needed in risotto. It also holds its shape better than other varieties like Arborio, making it the preferred choice for more refined risotto dishes.
